This year, I didn't do a ton of baking but I did manage to make a few things. The big hit was the Chocolate Chip Cookie Pie I found courtesy of Bakerella. I was looking for something that would be good warm and with ice cream...this did not disappoint! I made one to take to my Mom's house on Christmas Eve and we like it so much I made another one for Christmas Day. Here is the recipe if you would like to make one of your own, it's super easy!

Ingredients:
1 unbaked 9-inch (4-cup volume) deep-dish pie shell*
2 large eggs
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup (6 ounces) semi-sweet chocolate morsels
1 cup chopped pecans
Serve with ice cream (optional)

* If using frozen pie shell, use deep dish style and thaw completely. Bake on baking sheet and increase baking time slightly.
(I sat mine out for about 30 minutes and it was ready to go. I did put it on a baking sheet but didn't need to increase the time. I tend to like my cookies more chewy and moist.)

Directions:
- Preheat oven 325 degrees F.
- Beat eggs in large mixer bowl on high until foamy.
- Beat in flour, granulated sugar and brown sugar. Beat in butter.
- Stir in morsels and nuts and spoon into pie shell.
- Bake for 55-60 minutes. Cool on wire rack. Serve warm with vanilla ice cream (I actually baked mine for about 45 minutes and it was perfect.)

This isn't the prettiest photo since everyone just kind of dug in but I promise it is super yummy! The kids also baked their own cookies this year for Santa. All I did was mix the dough and they did the rest! Oh and I also cleaned up afterward. ;)
